Tomatillo Sauce (cooked)
This is your basic green sauce for use on just about any sort of Mexican food.

Ingredients
- 1 pound tomatillos
- 1 cup cold water
- 4 cloves garlic
- 1 small onion chopped
- 2 jalapeño chiles, chopped
- 2 tablespoons oil
- 2 teaspoons salt
- 1 teaspoon sugar
- fresh cilantro to taste
- additional chiles to taste
Cooking Instructions
Remove the husks from your toamtillos and simmer them for about 10 minutes.
Drain and put them in your blender with the cold water, garlic, onion, chiles and cilantro. Puree.
Heat oil in the saucepan, then pour in the sauce. Add the salt and pepper, and simmer for 5-10 minutes.
Notes
This sauce will keep in the refidgerator for at least a week, and will keep in the freezer till your next tomatillo harvest.
I like to freeze it in ice cube trays and then bag them up so I can just use the amount that I need.
